Matthias Gloppe, the founder of Echo, the first Parisian eatery inspired by Californian cuisine, has recently launched Kiss, an all-day takeaway counter dedicated to the street food and pop culture of 1980s and 1990s Los Angeles.

Chef Peter Lemos, renowned for his cult sandwich shop Wax Paper in Frog Town, Los Angeles, has curated the menu at Kiss, offering a range of gourmet sandwiches, Californian breakfast options, and homemade pastries and beverages.

For the graphics and interior design of Kiss, Matthias collaborated once again with Polonsky & Friends. Drawing inspiration from the vibrant and colorful atmosphere of 1990s Los Angeles, the aim was to evoke the laid-back street vibe of that era while maintaining a timeless coolness. The facade features bright cherry-red tiles reminiscent of classic Mustangs from the period. Inside, a lemon yellow metal counter stands out against geometrically patterned tiles and wooden wall panels, with the chrome steel kitchen reflecting in the mirrored ceiling. Custom-made lightboxes with slogans reminiscent of advertisements from the time adorn the shelves, paying homage to iconic LA delicatessens. Vintage touches such as retro lighting fixtures, a flip-flap clock, and a playlist from the nineties further immerse patrons in the retro California experience, rooted in the birthplace of skate culture and the ever-popular wellness trend.
